This morning I made whole wheat biscuits, sausage, sausage & gravy and scrambled eggs.
For dinner (we only eat twice) I made Asian Chicken Wings only because we wanted to get some for Sunday’s game and when we were in Walmart Tuesday, they had some but they were “use by” tomorrow (Friday). I told Vince I would stick them in the freezer when we got home, then take them out Saturday and they would be fine. We stopped by Aldi and they had wings with a “use by” date of February 16 so we got those, stuck them in the fridge and today I cooked the wings that needed to be used by tomorrow.
I had made pickled shrimp so we had those too, along with leftover cannellini beans and ham and a salad. That was all easy and little cleanup.
Tomorrow the fish truck is going to be here and I always try to get fish when they’re here so that takes care of Friday. Saturday Vince will grill steak. We haven’t done much grilling during the winter so it’s time to get back to doing some of that. I had planned to grill on Sunday before the game but we have a chance of snow on Sunday so, before the game, I’m going to heat up a jar of pork roast with apple, make steamed broccoli, saffron rice and salad.
Then all week next week, we’ll be eating food out of jars! That happens every fourth week and I love those weeks!
Expect to see lots of cross stitching next week.

is your fish truck Off the Hook out of the northwest somewhere? We get it in our area of Texas every month or so. Delicious!

Yes. There are a couple of locally owned trucks that come through here but they haven’t been by much lately. I love Off the Hook but, Vince doesn’t like it so it’s not often that we go.
