Yesterday I stitched all day. It’s 8 p.m. and I haven’t taken a stitch yet . . but I will!
There’s rarely a day I don’t think of the book, “IF You Give A Mouse A Cookie”. That’s my life most days.
First, I had a ham in the fridge and Vince wanted me to cook it like the one I made for Christmas which used this recipe. It wouldn’t fit in the Ninja Foodi so I cooked it in the slow cooker. Then I put it in the pan that goes in the Ninja Combi to brown the top but it wouldn’t fit in there either so I had to take it out and put it in the oven on air fry. Got that done, got the glaze on it.
Second, I needed to can garbanzo beans. We try to eat garbanzo beans in some recipe at least three times a week. Since we eat breakfast late, and then eat one more meal around 2 p.m., sometimes we want a snack in the evening and hummus with crackers or celery or carrots is perfect. It’s so much easier to whip it up if I have pint jars of canned garbanzo beans. They’re fully cooked by the time they’ve been pressure canned so it’s quick and easy to make just enough hummus for us for a good snack.
I prefer the black garbanzo beans over the regular ones but we don’t always have the black ones. Right now, we do have them so I’m going to can up enough to at last get us through the summer..
The yellow parts in the bucket are beans that have broken and the black skin has fallen off.
I canned 12 pints today. I should be able to can at least 24 more pints. That’s probably all I’ll can because this is the time of year I need to be emptying jars instead of filling them but we will empty at least 24 jars of these before I need to start canning from the garden and then the other 12 jars can get us through til I’m done canning the garden produce and will be able to can more beans for hummus.
Third, we love this Italian flat brad, Pane Carasau. I will usually make a double batch of that, divide it up and keep it in the fridge. When I do the second baking of bread that’s been in the fridge, it tastes just like fresh, even after being in the fridge for about a week.
Fourth, we needed more mayo. I always divide the finished mayo in half and leave half of it plain for Vince and spice up half of it for my mayo. The first interesting thing I saw was a jar of Black Cherry Chipotle Rub so that’s what went into my mayo. I can’t wait to try it on a sandwich or even in potato salad!
That’s about it – dinner with ham, green beans, salad and rolls . . and the other things, then cleaning the kitchen and there wasn’t time for stitching during the day. There’s always tomorrow, right?
Let’s see if I can get my 300 stitches in for the day!

Love & Lemons is one of my go to sites for recipes. This is one I often use. I’ll just pick a recipe and have never been disappointed.

My grandson LOVED When You Give a Mouse a Cookie! There’s a show on TV now by that name. Thankfully he outgrew it, but his 2-year-old brother is quickly moving into that age range… 🙂

What ratio of beans do you use in a pint jar?

I wash and clean the beans, then boil them, then let them sit for one hour in the water they were boiled in. Then I drain and rinse, then add 3/4 to 1 cup of the beans in clean jars, add 1/2 tsp. canning salt, fill (leaving the head space) with simmering water, pressure can for 70 minutes. This is for pints.
