I always tell Vince that I love eating at home. I wish I could cook and eat at home without having to clean the kitchen and put all the leftovers away.
If we’re going to eat out and we do it once every 6 – 8 weeks, then I want to go to Cane’s or Chipotle. Vince is ok with Cane’s . . not so ok with Chipotle. I had taken a pork butt out of the freezer a week or so ago but ended up with other things to cook so I cut that one up canned all the meat. I had really wanted pulled pork so I took another pork butt out and today I cooked half of it and canned the other half. Cooking a whole pork butt is a LOT of meat! I used this recipe to make carnitas. I’ve used that recipe for a long time. Then I made my version of Chipotle’s burrito.
I cooked rice, had pinto beans already cooked and in the fridge, made “chipotle corn“. We both added cheese. I added jalapeno pepper, cilantro and onion.
Delicious and way less expensive than eating out.
With cooking half of the pork butt, we had plenty for dinner and I still filled a quart jar with leftover pork. I told Vince we may have carnita omelettes for breakfast one morning. I think that would be great! He seemed ok with it too. We’ll have burritos again and there will probably be enough meat left to have it in baked potatoes.
The local BBQ restaurant somewhere we lived . . I don’t think it’s here but maybe it is . . they would put down a layer of mashed potatoes, a layer of pulled pork, another layer of mashed potatoes and top it all with cheese and bake it. It was delicious so we may have that . . pretty much the same as the baked potatoes with meat.
