I mentioned in the earlier post how I came to make pizza today. I had already started this post before the power went off so I’m going to finish it as I had started it . . some of this will be a repeat.
On today’s menu for dinner was carnitas. The pork butt wasn’t totally defrosted last night so it’s ok to wait another day on it.
Last night I had the TV on Youtube and it was just going from one video to another on my subscription list. I love Grains in Small Places’ recipes for fresh milled flour and she came on and was making pizza dough. I stopped the video, went to her website and printed the pizza dough recipe.
When I went upstairs to check things before going to bed, I was putting something in the fridge in the garage, a package of turkey pepperoni fell out of the fridge. I picked it up and thought . . I need to make pizza. We always use turkey pepperoni instead of the regular pepperoni .. it’s way less greasy.
Then later, I was chatting with Denise and she was making pizza last night so I figured those were enough “signs” that I should make pizza today.
I forgot the olive oil in that lineup. That’s all it takes – grain/flour, salt, yeast, honey, olive oil and warm water.
You can see the longer grains are kamut and the shorter grains are hard white wheat.
I milled the flour this morning and got the dough stirred up.
I left the dough in the fridge for a couple of hours then made the pizza.
I had the under counter lights on and that’s why it looks so bright and orange. I used mushrooms, onions, salami, turkey pepperoni, jalapeno peppers, and anchovies and, of course, mozzarella and pizza sauce.

I live with a man that doesn’t worry about things like the power grid. He thinks we’ll be gone before it is a problem. If I had my way, we’d have a solar oven, etc. I’m with you on being prepared! I feel like if we buy the stuff and we never need it, the kids will have it. With prices going up like they are, I’ve been buying staple things when they are on sale whether we need them or not!
