We love the eggplant salsa I canned in 2022. I only have a few pints of it left so I’m rationing it til I can get more made.
Most dinners that involve something that’s canned are so quick and, so yummy!
I sliced up two chicken breasts, seasoned the meat, browned it in a skillet, added some steamed broccoli that was still a bit crunchy and added one pint of eggplant salsa.
It was delicious and fairly healthy. We did have it over pasta.
We also had a salad and with the two chicken breasts, one bunch of broccoli and one pint jar, we had enough for one meal with leftovers for another.
I know you’re tired of hearing about my diet but . . look at this:
Sunday – Lemon Baked Cod
Monday – Smoked Turkey Salad in Spinach , Herb Wrap
Tuesday – Leftover Chicken, Broccoli in Eggplant Salsa
Wednesday – Seared Tuna Steaks
**THURSDAY** – Hamburger!!
Yay! Bloodwork happens Thursday morning. Even if the results show that the joint pain is coming from eating mammal products, I think I can get by with cutting back, without having to completely get off everything . . butter, milk, ice cream, cheese.
On our local news last night, they were talking to a lady with alpha gal and she said she cannot even eat foods that have enriched/fortified flour so she has to buy some special kind of flour. I wanted to say . . get a mill, buy some wheat and make your own but I know not everyone has the desire or the funds or the time to do that. She said she can’t even go with her kids to McDonald’s (not that I’m endorsing eating there but I know young, working moms sometimes need to do that. I did but if I had it to do over again, I wouldn’t.) She can’t go anywhere that beef is served because of the chance of cross contamination.
No matter what my blood tests show, I’m better off than MANY people who have alpha gal. My allergies are way less severe than what others are dealing with. But . . a hamburger and ice cream sounds really good. We don’t have ice cream in the house and probably won’t be getting any in the near future but I’m counting down the days til Thursday when I have a hamburger with cheese!

Since you have cut out all of the temporarily taboo foods, have you still experienced joint pain? Or has the pain lessened ?

The pain is still the same so I’m not sure if it takes longer to see a difference or if it’s totally unrelated. I have gone through four weeks of PT for the foot pain and that hasn’t helped either. The joint pain being associated with the alpha gal was a long shot but the eosinophil levels in my bloodwork have been going up quite a bit over the last year and the diet will also help rule out if that’s related to the alpha gal.

Hopefully, your results are all good and you can get by just cutting back…since you’ve been dealing with this for years, I’m guessing you have a good idea of how much meat your body can tolerate. BTW I know where you can get ice cream…

I’m going to be careful with the beef consumption just in case my body reacts differently after having not had it for over a month. I have no idea how those things work but I’ll have a burger on Thursday and then probably no beef again for a few days.
