I hate to even call this a ‘recipe’ but it’s our new favorite quick meal and we’ve been having it at least once a week. We’re having it today.
We started using what everyone affectionately calls “red bag chicken” from Aldi probably 5 or 6 years ago.
Someone shared a recipe years ago where you air fry these chicken breasts, mix up mayo and BBQ sauce, spread that on a bun and they taste just like a chicken sandwich from a popular chicken restaurant. They do! We ate those at least once a week for a long time but I think what we’re using them for now is even better:
The ingredients needed are simple:
Walmart has the Caesar salad kit in a regular size and a family size. If you’re making this for two, the regular size is fine. The family size makes a bit much for two. Aldi also has Caesar salad kits.
We’ve used other salad kits when we didn’t have the Caesar and they’re all good.
Any wrap/tortilla will do – plain tortillas, basil tomato, but this Garden Spinach/Herb is my favorite. Aldi has something similar but I like the Mission brand better. Also, you can get the Garden Spinach Herb variety in low carb and gluten free. I will add that these are hard to find at the Walmarts around here. The one closest to us is one of the smallest and it seems to be the only one that consistently has these in stock.
And, of course, you need the red bag chicken.
I air fry the chicken and cut it into bite size pieces, heat the tortilla up on the stove – not brown or crispy – just warm. Then spread the salad down the center of the tortilla, top with the chicken. Roll it up and eat it. I suppose you could add salsa or more dressing but we don’t. We would normally eat this with soup in the winter but all the soup I have canned is some variety of beef and the one chicken soup I have needs cream so we’re just eating them without soup. In the summer, we’ll have Caprese salad or hummus and crackers . . we try to add something with it but it’s really a meal by itself. For me, if I put too much salad in it, I can’t even eat the whole thing.

Yes. I even use the croutons.

I do something similar to this, except I use a raspberry vinagerette dressing and add mandarin oranges. I love making wraps, so easy to make for one person.

Thanks for that tip. I’ll have to try it. Yes, they’re so quick and they’re refreshing and almost any way I fix them, there’s way less mess in the kitchen to clean up.
