I have been in the kitchen almost all day today or . . so it seems. I fixed breakfast this morning and while we were still sitting at the table, I looked at Vince and said “I think I’m going to make another cracker pie!” I guess I wanted him to say “that’s ok” because we both know we don’t need another cracker pie but in my defense, I only got one slice of the first pie and it was a small slice because I had a small piece of the apple cake too. I divided what was left of the pie and cake and gave half of each to Chad to take home. Vince ended up eating a slice and there wasn’t much left so I left it for him.
He said “That’s a GREAT idea!” so after breakfast I made another pie. We always eat breakfast about 9 a.m. so by the time we ate, the pie was made and I cleaned up the kitchen, it was after 11. When I started to go downstairs, Vince said “What’s for lunch?” Huh? That’s when I remembered . . there was nothing on the menu for today because we had a 1:00 meeting in town and we were going to grab a late lunch/early dinner after the meeting. My guess is we were going to have Cane’s because all I can really eat is chicken or seafood. But, when I listened to my voicemails before I went to bed last night, there was one that our meeting needed to be rescheduled. Vince said “We can still go out for lunch” but I didn’t want to do that.
I went out to the freezer and felt like the 13 year old Chad, standing there with the door open, staring at everything waiting for something to jump out at me . . and it did! I saw crawfish boudin, smoked pork boudin, a bag of frozen homemade meatballs and a bag of shrimp. I brought it all into the house and dropped it on the counter. Vince looked at me like . . something doesn’t seem right.
I told him . . I can heat up the boudin now and then for dinner you can have meatballs and marinara and and I’ll make something for me with the shrimp. That was a plan. Vince likes smoked boudin and I like crawfish boudin so we each had a link of boudin with crackers.
At my last Azure pickup, I got Durum wheat so I ground some of that and made pasta. The texture was so good! I had already started the marinara before noon and let it simmer til about 4 p.m., then put the meatballs in and kept it going til they were hot.
For me, I sauteed peppers, onions, the shrimp, added zucchini and roasted garlic.
I had it all ready and had almost forgotten to put the roasted garlic in! I had thought about adding a bit of white wine but then decided to add a can of coconut cream
Mine was delicious! Vince said his was too. We’re all happy. Now I can sit and stitch for a few hours.

It did. I’m one of those who, without a plan, will stand there and stare into the freezer all day and never come up with a plan so I was proud of myself.

Hi Judy I did get this one from your feed with an e-mail. I llike hearing what you make to eat. I do not cook much and I am very limited in choices as I cannot have any Milk products, Lactose intolerant. So I just enjoy your pictures.

Since my “diet” excludes all mammal products, I haven’t been able to have any milk, butter, cream cheese, sour cream, etc. I’ve substituted oat milk for most everything – gravy, rolls, icing, etc. and it worked fine. I was able to use the coconut milk “whipped cream” in a squirt can for our Christmas desserts and it tasted great. I tried vegan cheese and won’t do that again. Didn’t like that at all. The vegan (or whatever it’s called) sour cream and cream cheese aren’t bad. Don’t get me wrong . . I’ll be very happy when I can go back to the real thing so I do feel bad for those of you who permanently cannot use dairy products.
