Yesterday Christmas Dinner seemed like it was going to be so easy and quick. I guess it is but it’s still been an all day job.
- Ham – This is cooked in the Ninja Foodi. I watched The Salted Pepper’s video and it looks super simple and since it’s slow cooked for two hours, then the Air Crisp feature is used . . this is going to be something that doesn’t take much effort. I’ve mixed up all the seasonings and will get it going tomorrow morning.
- Sweet Potato Casserole – the sweet potatoes are cooked in the slow cooker on low for 8 hours. I’ll get them going about midnight tonight. Not long before we’re ready to eat, I’ll add the meringues and get them toasted.
- Brussels Sprouts with Sriracha Mayo – these will be cooked in the air fryer. I grated the cheese and would have washed and sliced them but I wasn’t sure if they would turn brown so I’ll do all that tomorrow.
- Smoked Duck Breast – this is what I’ll eat but others can have it too. Probably only Chad will want to try it. It’s fully cooked so I’ll probably wrap it in foil and heat it in the oven while the rolls are baking.
- Candied Carrots
- Green Salad
- Potato Salad – I’ll make the potato salad tomorrow because I like it warm.
- Rolls – I’ll make those in the morning.
- Cracker Pie – The pecans are chopped. It’s a super easy pie to make.
- Apple Cider Cake – It’s made except for the glaze. I’ll do that in the morning.
Since so much of it has been done today, I don’t think tomorrow will be too hard to get a good meal on the table without much effort.
