We were out of the house very early (for us) this morning. We left here about 7:30. Not a good time to be out because ALL the people going to work from north of Joplin were all going to town. I had a podiatrist appointment at 8:15. I had seen this guy once before when I had plantar fasciitis and I liked him a lot, except he gave me those horrible shots in my feet. But, my GP felt it better that I see the podiatrist in their network. Didn’t like him at all so I went back to the first one. I wish I could see him for everything!
From there we ran by Chick-Fil-A. Vince wanted breakfast and there’s so much I can’t eat but I can eat chicken so I got chicken strips for breakfast. It’s so nice that Chick-Fil-A will cook anything you want – well not anything but I didn’t want nuggets which is what they normally serve for breakfast.
From there, we went to Sam’s Club. Vince got a cart and I got a cart. Usually there are things I want but by the time Vince gets what he wants, I figure we don’t need anything else but, since Vince went one way and I went another, I loaded up my cart with everything I wanted. Just to prove what a nice wife I am . . I LOVE the Palmetto Pimento & Cheese. Sam’s had stopped carrying it and they have it back. Last month when we were there, we bought it and used it all. Today, I put one in my cart for Vince, even though I can’t eat cheese for a while.
What I added to my cart:
- Two packs of tuna steaks. I bought two packs because there five in each pack. I divide them up into two per pack and freeze them so I needed two packs of five in order to get an even number for freezing. Makes sense, right?
- A package of sushi – the fake stuff but I still like it.
- Two packs of Cod with two pretty big filets in each package.
- One package of chicken breasts.
- Two of the 38 oz. pink Himalayan salt containers.
- Mexican Cokes – They had a package of 24 – 12 oz. bottles. I love those but I don’t drink them often. The only place we find them is at one of the Dollar stores and they’re not $1.
- Black Cherry Chipotle rub – I used this on chicken tonight for dinner and it was delicious!
- A big pack of saltines. I think there are 12 full size sleeves in there. During the winter we use a lot of saltines with soup.
When we got home, I divided the tuna into 4 bags of 2 steaks, vacuum sealed those. Two are marinating in fresh ginger and soy sauce which will be dinner tomorrow night. I divided the chicken breasts into one breast per bag, vacuum sealed and froze those except for two that I kept out for dinner for today. I cooked two so we’ll have leftovers for Saturday. I slice those thicker breasts in half so each one becomes a meal for each of us. I couldn’t even eat all of mine (half a breast) tonight. The Code filets were divided into four different bags and frozen. That’s 16 meals – a bit over half what we’ll need for my “no beef/pork” month.
It was nice to get that Sam’s shopping done, get the food all divided up and in the freezer. We try to go to Sam’s once a month but often it’s once every two months because we just don’t go to that part of Joplin much.

Next week is my Sams run. 100 miles east into the Greater Phoenix area. But now there is a new Aldi in the area so I will go to both and fill the freezer and the pantry. Miserable traffic.

Where our Sam’s is located, there’s lots of traffic but probably only a fraction of what you have to deal with. There are things that are always less at Sam’s and things that are sometimes less at Aldi but Aldi is such a fun shopping experience, I love going there – not every day like Vince enjoys though. 🙂

I love the mesquite grilled chicken breasts from Sam’s. They are already cooked, so they’re quick to heat up. They don’t have them all the time, though, so I usually get two bags whenever I find them.
