For today’s meal I made The Salted Pepper’s Cheesy Meatloaf. It’s very similar to the Sweet & Sour Meatloaf that I’ve made for 25 years or more. But, the Cheesy Meatloaf uses crushed Cheez-It crackers instead of bread crumbs AND it’s made in the pressure cooker. I put less salt in ours and I didn’t poke cheese down in the meatloaf. I know that would be delicious but I didn’t feel like we needed the extra fat. And, it’s made in the pressure cooker. Chad’s electric company has started the time based power rates (probably not the right name) and they’re paying way more for power they use between 4 p.m. and 8 p.m. With an electric stove, I’ve been trying to send them recipes they can make in the Instant Pot which uses less electricity and is quicker. The recipe is for the Ninja Foodi, and that’s what I used. Because it has the air fryer and the crisp feature and the Instant Pot does not, you still might need to run it under the broiler of the stove but it’s 5 or 10 minutes.
Vince walked into the kitchen while it was cooking and he said “There are so many good smells coming from this kitchen”. The other things we were having were a baked sweet potato and tabbouleh salad, neither of which had much smell so he was smelling the meatloaf.
He went on and on about how good it was. It uses 2 pounds of meat so it was a big meatloaf. We each had a slice. Vince walked by what was left and stopped, stood there and looked at it for a minute and said “That is so good . . I could eat the whole thing!” Good! I made enough so he can have some for leftovers when I’m not cooking beef. I’ll probably divide it up into serving size pieces for him and freeze some of it.
Tomorrow I’m making Swedish Meatballs. I’ll freeze some of them and then make the sauce/gravy right before I serve them and that will give him a bit more beef/pork and not so much chicken and fish.

-Our power company went to the same kind of tiered pricing last year. I really try to not use my electric oven between 4 and 8pm. I get angry about the time frame, as it seems like the company chose it specifically for when we are cooking, turning on lights, and heating for the evening.

Yes, and showering with an electric water heater, kids doing homework on the computer or watching movies. Pretty much the entire time kids are home from school before bed there are the higher rates.
