We have a busy week — probably not what many of you would call busy but busy for us. We have a painter here most of the week. He’s painting the outside doors that are painted, cleaning and re-staining the deck. Today he did some sanding and cleaning on the deck, painted the doors and tomorrow and Thursday will be spent on the deck. I wish we had taken all the wood down and re-built the whole deck with the composite material – Trex or something similar, but . . that wasn’t my call so now we’ll be working on the deck as long as we’re here.
Also a friend is out of town and we’re taking care of their pets for a few days. It’s no trouble at all and I’m very happy she feels comfortable leaving her pets in my hands.
Anyway, I wanted meals for this week that were easy to heat and re-heat in case Vince wasn’t eating til later than I wanted to eat. This also happens to be a fourth week in my food planning and the fourth week is when we eat out of the freezer or we eat out of jars.
We’re eating left to right and I didn’t take a picture of what we had last night but here’s this week’s menu, all from jars.
Monday – Spinach wrap with roast beef from a jar with Caesar salad.
Tuesday – Chicken (pint in the left) and jambalaya (quart jar behind chicken). There’s chicken in the jambalaya but I add more and we had enough for leftovers.
Jambalaya, cheesy corn and salad.
Wednesday – Apple Pork. I will make saffron rice and serve the pork over the rice, okra and tomatoes (freeze dried okra and tomatoes from the greenhouse) and coleslaw from a jar.
Thursday – The hospital is serving fried fish. If the painter is gone, we may go eat there but if not, we’ll have the second jar from the right, which is Green Tomato Curry. We’ll have that over chicken and we’ll eat that over rice noodles, pickled beets and a salad.
Friday – Baked potatoes with chili, jalapenos, cheese and sour cream on top!

The apple pork sounds interesting. Can it be made with fresh pork instead of canned pork? I really need to come up with some easy new recipes for this house of picky eaters.
