Yesterday I woke up with a headache. We went from having temps in the 80’s during the day, to 17 degrees at night to day temps in the upper 60’s and night temps in the 40’s. So, with the crazy weather swings, I have headaches and yesterday was one that just would not go away. I took sinus meds, and aspirin and slept way too much of the day.
I kept thinking .. I have to get something cooked for dinner but I didn’t feel like eating and for sure didn’t feel like cooking.
I was super happy to see that Red Beans, Sausage, Rice & Coleslaw were on the menu.
So simple to get dinner on the table. Grab two jars, make a pot of rice, make a small batch of cornbread and dinner is ready!
I cooked extra rice because we have a ham so I can make ham fried rice. I froze the rice because it’s not on the menu next week til Thursday but fried rice with broccoli, carrots, onions, green onions, peas, eggs, ham and rice is a good, filling meal cooked in one pot!
There was cornbread left over. I crumbled it and will make cornbread salad with it early next week.
Red Beans, sausage and rice is one of my favorite meals – and even better when almost all I need to do is open a jar and heat it up.

Off subject but do you still use your sous vide? Does Chad still use his?

I do still use it. I’ll have to ask Chad. Almost every week I use it to make egg bites and keep them in the fridge. We use those either for breakfast or when we need to increase our protein for the day. I use it to pre-cook a pork butt before smoking. I have two meals on this week’s menu that use the sous vide.

I talked to Chad this evening and asked him if he still uses his and he said yes . . all the time.
