Sunday was meatballs and spaghetti. Anyone out there NOT know how I feel about those? But, I do make them. I use two pounds of ground beef and that makes about 30 meatballs, which is enough for what I call “three batches”. Ten meatballs is enough for us to have it for a meal with pasta and then another meal with meatball sandwiches, and sometimes, there’s a meatball or two left over and Vince will heat those up and eat them either as another sandwich on another day or he’ll heat up leftover pasta from the fridge and have another small meal.
There’s everything fixing to get mixed up and made into meatballs. I don’t mind eating just meatballs. In fact, I love them with brown gravy over rice but . . that’s not what we eat on Sundays around here. I did crumble up a couple of the good biscuits and use them for bread crumbs.
For years and years I fried the meatballs and made a mess on the stove. No more! I bake them and switch the oven to convection the last few minutes to get them nice and brown.
I was using Vince’s phone because mine was downstairs and I was too lazy to go down and get it. I know I took pictures of our bowls of pasta, sauce and meatballs but guess I didn’t send them to myself so . . you know if I made the meatballs and sauce, Vince got his meatball dinner on Sunday. 🙂
