We love carnitas and when we were out shopping last week I grabbed two pork butts. Friday I cut one up, seasoned it, spread it on a large backing sheet, covered it and cooked it about three hours at 300. That night, I took it out, drained a good bit of the fat off and stuck it in the fridge. Then yesterday morning, I took the meat out, shredded it, added a bit more seasoning and roasted it uncovered at 275 for another couple of hours.

That was so delicious! And, it was super easy and hardly made any mess. See that guacamole back there? I didn’t have any fresh avocados but I did have plenty of freeze dried avocado.

I dumped a bit of it into a bowl, added water, let it sit for a minute, added lime juice and seasonings. Vince doesn’t like onions in it so that’s it – water, lime juice and seasoning. Not quite as good as fresh but definitely good when that’s all you have on hand.
