Yesterday after we finished eating the Carnitas, I started putting the leftover meat in jars and I was planning to put it in the fridge and have it over the next few days but there was going to be 3 quarts of it. That’s too much to have in the fridge so I ended up canning it.
Six pints of carnita meat! Here’s how I will use these:
- Baked potatoes topped with meat, sour cream, cheese, sour cream and cilantro
- Casserole where I put mashed potatoes on the bottom, then spread the carnita meat with gravy over the mashed potatoes, then a bit of grated cheese, more mashed potatoes and more cheese on top.
- Spanish Potato Soup
- Chicken Tortilla Soup but substitute carnita meat
- Carnita Omelette for breakfast
Having meat like this in a jar is so convenient and I’m always happy to have more of it.
