Yesterday I was putting away the jars of Green Tomato Curry and as I was re-arranging things to make try to keep some sense of organization in the storage room, I came across a few jars of pork but I had not labeled them. I knew they had been canned this year because of my storage system. Everything in that room was canned in 2023.
I opened the jar, tasted the liquid and knew it had a Mexican flavor. I made a roux, added onions, bell pepper and jalapeno pepper, then dumped the contents of the jar and served it over rice. I went back and found it on the blog – in this post. It was just pork that I seasoned, roasted and poured enchilada sauce over it. The quart was plenty for two meals for us. We didn’t even eat half of it today. It was so good . . I’ll be buying more pork butts and doing this again soon.
I love having food in jars. After all these years of canning, I can pretty much tell what’s going to be something we will love. And, if something isn’t what we love, it’s pretty easy to spice it up, add this or that and make it something we love.
