Yesterday I smoked ribs for dinner. I was cooking black beans to go with them and I asked Vince what else he wanted. He said “You always make potato salad with them.” I wasn’t too much in the mood for potato salad so I told him I thought I’d make twice baked potatoes. Then I remembered I had a bag of frozen hash browns in the freezer so I would make Hash Brown Casserole. That’s about the only thing we like at Cracker Barrel so we never go there any more and I do miss their potatoes.
I have a few of these three cup glass containers so I put whatever I’m wanting to freeze in these, freeze it for about 24 hours, then pop it out, vacuum seal it in bags and then I can re-use the containers right away. Any time I pull something this size out of the freezer, I can stick it in one of these containers, let it defrost and bake it without having to figure out what size pan to put it in for baking.
I’ll stick the bags of cheese in the vacuum seal bag too. The dish on the right is what we had for dinner and we didn’t eat it all so we can have it again this week.
The ribs were delicious and of course, there was a good bit left for at least one more meal. I love having leftovers!

Yum, leftovers! I like Cracker Barrel meatloaf and pot roast, too, with the hash browns.

We’ve had such terrible service there the last few times we’ve gone, I doubt we ever go back to them but I do love the food there.
