Yesterday was our Azure Standard pickup day and one of the things I had ordered was cranberries. It was 10 pounds of frozen cranberries that were so pretty. I should have taken pictures but I didn’t.
Early this morning I juiced the cranberries. I got five quarts of juice. I didn’t mash the berries but scooped them all up, filled quart jars about 1/3 to 1/2 full of berries, added a bit of sugar, filled the jars with boiling water and canned those. After a few weeks or months, I can strain that juice out as needed and it will be just as good as the other four quarts. I filled seven quarts with the berries.
I find homemade cranberry juice is so, so much better than any storebought juice I have ever bought. From the seven quarts with the berries. I should get about five quarts from those, and with the five quarts of juice, that will give me 10 quarts of juice.
I paid about $30 for the cranberries so the cost for each quart is about $3. Can’t beat that for juice made from organic cranberries. If Vince is happy with this, I’ll probably get more cranberries next month.
I’m thinking I might use the berries I strain out of the juice and make cranberry sauce. Think there’s enough “cranberry” left in them to make a decent sauce?
