I’m not sure the Every Bit Counts Challenge has real rules but I had hoped not to repeat anything but today is a repeat. I can only do so much so this has to count for today.

Yesterday I picked a good bit of basil. I wasn’t really sure what I was going to do with it but there was nothing in the freeze dryer and I picked okra three times yesterday so this morning I loaded up the freeze dryer with two trays of okra and two trays of basil.
Each tray of okra gives us enough for about three meals. I vacuum seal it in quart or half gallon jars and when I’m ready to use some of it, I open the jar, pour out what I need, then reseal the jar until I’ve used the contents of the jar. I usually vacuum the basil in pint jars because a little freeze dried basil goes a long way and a pint jar of it lasts a good bit of time.
