Vince loves Cincinnati Chili. I had never even heard of it til I met him. He raved about it and when I finally had it, I was not impressed. I made it a couple of times for him but then I stopped because Chad didn’t like it. I didn’t like it. At least with regular spaghetti and meatballs, Chad liked that. So, Vince decided he would start making it himself. Chad swears to this day that Vince made it every other day for years, but he didn’t. Then one of those fast food places came to Owensboro, KY while we were there and they served Cincinnati Chili. Vince was in heaven! It was right between our house in the country and our house in town. I think the only reason he ever went to the house in town was just to have to pass by the place that sold Cincinnati Chili. I can’t believe I can’t remember the name of that place.
Anyway, I still don’t like it but I told Vince I would make some and can it in pints so any night I want something he doesn’t like, I can open a jar of Cincinnati Chili, heat it up, cook spaghetti noodles and we’ll both be happy.
I wanted to try a couple of recipes because there are some vast differences in the recipes, and find one he loves and that will be the recipe I can. So . . today I made the first recipe.
It looks so good. I love regular chili but I don’t like cinnamon and cloves in my real food. Cookies, cakes, pies . . yes, but not in chili.
Vince tasted it and said it’s spicy . . did you put something spicy in it? Nope . . did exactly what the recipe says. I’ll fix spaghetti and he can try it over that and see what he thinks. This is a start. If he doesn’t love this recipe, I’ll try another one.

I live in Cincinnati, but I’m not a native. I think it’s one of those things you like because you grew up with it. After 30+ years, though, it has grown on me and I’ll have it now and then. They serve it with portion-sized packets of oyster crackers and they are the best oyster crackers ever!! My 11 YO granddaughter was born here, and she has loved it as long as she’s been old enough to eat solid food, I think. LOL! My sister LOVES it, too, and doesn’t even live around here. Anytime she’s here or in another city where they have a Skyline restaurant she’ll get some.

I’ve tried to like it for 25+ years and still don’t so I’m not trying any more. I’ll fix it for Vince and I’ll eat something else. Tonight he had it and I had scallops with eggplant peppers, onions and a wine sauce. Much better! 🙂

I have lived about 30 minutes north of Cincinnati my whole life & I do NOT like Cincinnati Chili! Here they have Skyline Chili & Gold Star Chili. I used to make a Cincinnati style chili for my son & his friends, they would eat the whole kettle full. It had cocoa powder & very little cloves & allspice. If I must have chili, I prefer White Chicken Chili or Sweet Potato Quinoa Chili.

I’m with you. I LOVE white chicken chili and Sweet Potato Quinoa Chili. Last night I was looking for a canning recipe for white chicken chili. We have lots of sweet potatoes in the garden and I have quinoa coming on my Azure Standard order Thursday. My recipe has chili, cloves AND allspice but just small amounts of the cloves and allspice.
