Years and years ago, back in 2014, a friend had canned coleslaw. I was skeptical about whether the cabbage would be mushy and gross but it is not! This is the recipe we use. Here’s a post I wrote in 2015 about cabbage, coleslaw and kraut. Even if you’re not interested in making any of those things, there are a couple of good pictures of Rita when she still had eyes and loved sitting on the back of the sofa. Sweet little girl!
Fourteen pints! That should last us til mid-November but I may go ahead and make more – depending on how many empty jars I can come up with.
