While trying to make room in the freezer for more elderberries yesterday, I found 6 pounds of breakfast sausage so I stuck that in the fridge to defrost, browned it this morning and canned about 5-1/2 pounds. I cut one tube in half and we had some for breakfast this morning and will probably have some tomorrow.
I got 12 half pints.
There isn’t as much grease in there as you would think. It’s a very thin layer that goes just around the glass. There’s never any grease in the middle of the jar. I think because the outside of the jar cools faster than the middle so the grease hardens around the edge . . probably the way it hardens on top of food in the fridge. When I start to use this meat, I can either dab at it with paper towels after the meat has heated or microwave the jar (without the lid), then pour the meat onto a paper towel and proceed.
These little half pint jars are the perfect amount for making sausage and gravy for breakfast. Vince likes it . . I do not. I would like it with brown gravy but not with milk gravy. So, when I fix it for breakfast, I eat maybe a spoonful and even these small jars will be enough for Vince to have sausage gravy over his biscuit for two mornings.
One more thing out of the freezer!
