The tomatoes are slowing down so I’ll soon have more time to can things other than from the garden. I need to put more effort into canning food from the freezer. This morning I pulled out 15 pounds of ground beef for canning and 2 more pounds that I planned to use (1) for meatballs with okra and tomatoes and (2) for a meatloaf for later in the day. Then when I started canning, I decided to use leftovers for dinner today and went ahead and canned all 17 pounds of the ground beef.
I ended up with 10 quarts. I could have squished it all down and put 2 pounds of meat in each jar but about 1-3/4 pound in each jar means we can open one jar and have two of the following meals:
- Tacos
- Taco stuffed baked potatoes (potatoes with taco meat, cheese, black olives, sour cream, jalapeno peppers)
- Taco salad
- Mac & Cheese with taco meat
- Taco pizza
There are other recipes I’m sure. I would be happy to can another 10 quarts of taco meat.
