As I posted already, Friday I processed the basil for the freeze dryer, canned the turkey and made and canned the tomato jam. My feet were not happy yesterday and I wasn’t sure what I was going to cook for dinner. I took out a big sirloin steak Friday and stuck it in the fridge to defrost. When I checked it yesterday morning, it wasn’t terribly defrosted but I figured by about noon, I would be able to cut it, brown it and cook it in the Instant Pot. Vince had asked for beef tips and noodles this week. The more I thought about it, the more tired I felt. I thought about making tuna salad and serving it in an avocado half; I thought about seeing if Vince felt like getting a pizza but he’s gotten off his tummy meds and I was afraid the pizza might be a bit greasy and I didn’t want to be the cause of him needing to get back on those meds. Then, I remembered . . I have lots of roast beef canned.
I grabbed a jar, went upstairs, added a bit of olive oil to a pot, added onions, bell pepper and jalapeno pepper. Added a bit more olive oil, added flour, browned the flour, added the jar of roast beef.

Before dumping the jar, I removed most of the grease that had hardened at the top of the jar and left just a little, which is what you see that kinda looks like ice cubes. I simmered that for maybe 5 minutes, added a bit of Worcestershire sauce, about 1/2 cup of sour cream. I had a package of wide flat noodles so I cooked those. I sliced up some okra from the garden, sauteed it, sprinkled cornmeal over that and cooked it til the cornmeal started to get brown. I sliced a couple of tomatoes from the garden and dinner was served!

It was so good and was so very easy. Vince loved it. He thanked me for cooking what he had requested. I told him . . the beef came from a jar. He said “That was great. Can you can more?” Sure . . once the garden is done. I told him except for steaks and enough ground meat for making hamburgers, I’d can every bit of the beef if it were up to me. It’s so easy to prepare a meal when the beef is already cooked and totally tender.

I have reached the age of “unhappy feet” inside. I bought a pair of Birkenstocks for “in house only” use. Anytime I’m going to LA quilt or do some major kitchen time, I wear them. I worked the OR in them for 30 years and can’t recommend them enough!
