Carthage has Food Truck Friday in the park on the second Fridays of each month during the summer. There are two trucks there that I like – Ghetto Taco and London Calling, which has a fried fish and chips truck and a pasty truck. We like their fried fish but I LOVE their tartar sauce and their fries are the best I’ve had.
We each could go to whichever truck we wanted to go to but both decided to get fish.
Chad was telling me about quesabirria tacos he had while working in Michigan last month. He kept going on and on about how good they are. I found a recipe for them and I was going to try making them soon.
As we were leaving the park, I saw that Ghetto Taco had quesabirria tacos! I stopped and asked them if they had them at their restaurant, which is very near our house, and they do not – only every now and then as a specialty item. I wish I could have tried them.
I think Chad is making them today or tomorrow and I’m anxious to hear how the recipe he’s using works and if he recommends it. I will be trying these. I’m also watching Ghetto Taco’s weekly specials to see when they have them and we’ll try them there.

I never heard of them at all. We just had a truck place open on a corner where they built a big grocery I love, a storage unit, lots of other shops, and now a Taco Bell is coming in on that corner. I’m looking for a chance to hit the truck place and try something new.

Our son told us about them – said he was trying them wherever he went (does a lot of traveling). My birthday this year (one of the BIG ones) I wanted to go to Vegas and try different foods and I wanted to be with my hubby and kids (daughter lives in Vegas). Anyway, our son found a place for us to try – they just called them birria tacos, but they had queso in them. I “think” they dip the tortilla in a spicy liquid and then fry it and fill it with the meat (which is kind of a barbacoa) and the queso is in the bottom (before the meat). My daughter and I got the 3 taco plate (not knowing if we’d want more than one or not, but decided to order the 3 plate). We found out 1 was plenty. You had a choice of meat – goat or beef. Both meats were wonderful! They are very, very good.

It’s actually the top of the broth/liquid from cooking the meat that they dip the tortillas in before frying. I can’t wait to try them. I don’t know if Chad made his today or is making them tomorrow.

What Dottie said. I learned to make them when I lived in NM. I make them once a month or so.
