I think I mentioned that before I left for Louisiana, I picked four gallons of peppers and left those in the fridge. Last night I picked two more gallons. This morning I separated out most of the bell peppers and chopped those into medium size pieces. All the others I chopped into large pieces and the peppers are all now in the freeze dryer. I’ll vacuum seal the bell peppers in jars and use those as I need bell peppers in recipes. All the other peppers will go into the blender to make a mixed pepper powder that I’ll use in gravies, eggs, sauces, etc. I kept out enough hot peppers to make a couple of jars of pepper sauce this evening. I saved out a couple dozen jalapeno peppers because I’ll use those when cooking.
I have seeds from Marconi, Poblano, bell and banana peppers and they will dry on the counter til I put them away til time to start pepper plants. My cayenne peppers aren’t red yet so I haven’t picked any of those. Peppers should make til frost and I’m hoping that since they’re in bags, I can bring them into the greenhouse and extend their life/productivity into the winter.

We bought a few banana peppers and a bell pepper, just for my son to play around with. I like the banana peppers because they aren’t hot, but unless I want to spend extensive time peeling and de-seeding, I won’t be eating any more peppers in this lifetime. Okra is worth it, peppers not as much.
