With fresh peaches being readily available, we have fallen in love with this salad. It’s just peeled (or not) chunked up peaches and tomatoes, as much fresh basil as you like, sliced into sliver type pieces and crumbled goat cheese. If you don’t like goat cheese, you could use fresh mozzarella.
I added a bit of salt and pepper.
For the “dressing” it’s a balsamic reduction to which I added a bit of honey and a splash of vanilla.
The goat cheese could be more crumbled and not in such huge chunks but we both love it so the more, the better. I can’t imagine anything being better than this salad on a hot, summer day.
We had leftover peach cobbler so Vince heated that up, I added ice cream, then I poured the leftover balsamic reduction over the ice cream.
On top of the cold ice cream, the balsamic reduction turned to the consistency of chocolate syrup. it was delicious too!
Maybe today I’ll get back to my healthy eating.

Now for it to warm up here to try it. It would be good with Feta or Burata also. It was so cool in NH today that I roasted a chicken to warm the house up a tad.

Oh, that’s almost cruel to tell me that! It’s 71 here (10 p.m.) The other night at this time, it was still 90.
