The other day I was cleaning and chopping carrots for the freeze dryer. It was time to cook breakfast and I thought . . it’s normal to have chopped potatoes for breakfast so why not chopped carrots? I pan fried carrots just like I would potatoes. Vince looked at his plate and said “Are these carrots? For breakfast?” I said “Sure . . why not?”
That night I grabbed a roll of sausage out of the freezer for breakfast the next morning. I always buy Italian sausage in a package – those styrofoam square “plates” with the clear wrap over them – like ground beef but Aldi has it in rolls like breakfast sausage and I forgot we had bought some.
The next morning, I cut it and I thought . . this looks different, but I cooked it. Vince started eating before I did and he said “There’s fennel in this sausage!” I said . . well, I guess I just accidentally used Italian sausage for breakfast. Sorry!” Vince said “That’s ok. If we can eat carrots for breakfast, we can eat Italian sausage for breakfast!” That left over half a pound of Italian sausage I needed to use. I used a pint of freeze dried okra, soaked it til it was “normal” again. I cooked the Italian sausage in a skillet, added onions, garlic and bell pepper, sauteed that, added a can of diced tomatoes, onion powder, oregano and Italian herbs and it was great!
I had seen this recipe for Lemon Garlic Rosemary rice so I made that and served the okra over it. The rice was delicious. I didn’t soak the rice ahead of time. I used hot water with a tablespoon of Better than Bouillon, I used olive oil in place of avocado oil and butter in place of ghee. I always use equal portions of rice and water so I did that. I used 1-1/2 cups of rice and water. That’s a recipe I’ll use over and over.

Gosh that sounds good, Judy. All of it. I’ve been craving okra, and someone gave me some seeds, so I will have Paul plant some, but I don’t know that I can eat much with the skin on it. I’m sure going to try, though!

.Since you like that rice recipe so much, you really don’t need another one, but what does need have to do with it? I have a terrific recipe that makes me glad I resolved to stop avoiding mushrooms. John loves it, too, and he usually doesn’t like rice (“flavorless”). I mentioned before that he just puts soy sauce on most rice. Not Budget Bytes mushroom rice! https://www.budgetbytes.com/mushroom-rice/ One thing-I believe thyme is NOT your favorite herb. Perhaps you could substitute another herb, like rosemary or oregano?
