Smash Burger Tacos

This week I’ve cooked on the outdoor griddle four of the last five days. When the weather is halfway cooperative, I try to plan meals around the griddle. Any time I can cook a meal in one “pot”, I’m happy.

Yesterday I had taken a pound of ground beef out and was going to make smash burgers on the griddle. I was on my way to reflexology and Nicole called and said she and Addie were coming to town and wanted to come by and visit with us. I told her I was cooking burgers and asked if they wanted to eat here. They did so I called Vince and asked him to take out another package of ground beef. I told him which freezer it was in but I forgot I had used the last of the 1 pound packages in that freezer so he took out a two pound package. I cooked burgers using the two pound pack but still had a one pound pack (the one I had taken out earlier) in the fridge. Last night I was watching youtube videos of cooking on the griddle and saw one about making “smash burger tacos.” I had everything I needed to make these so that’s what I made yesterday. Vince said “He wasn’t comfortable with me eating burgers two days in a row but the ground meat we have here hardly has any fat. I have to add olive oil to the griddle to cook it so I’m not concerned.

Looking at that picture, you probably couldn’t even guess what it is. 🙁

To make them, make smash burger meat just as you would for smash burgers. I usually season the burgers with salt, pepper, garlic powder and onion powder. I had plenty of that mixed up from yesterday so I added a bit of taco seasoning to it and used that to season the meat. On the griddle, add a bit of butter and toast one side of a flour tortilla. Add the meat, grated cheese, salsa, lettuce, onions, salsa . . whatever you want.

We had leftover grilled onions from the burgers so I added those. The salsa is some I freeze dried (just the tomato, jalapeno, onions and cilantro) last year so I added a bit of water and it was instant salsa.

I think I liked the taco better. Vince said he liked them both equally. Really, except for adding the taco seasoning and using a tortilla instead of buns . . they’re pretty much exactly the same . . if you put salsa on the burger! Both are quick, delicious and little to no mess to clean up.
