It was so good and I didn’t take a picture! I had my phone upstairs and just didn’t think about it.
I already told you I made carnitas with a pork butt, and pinto beans. I went out and picked a big bunch of greens, made a salad with black olives, tomatoes, cucumbers, the greens, topped it with shredded carinita meat, pinto beans, then use the salad dressing I make using sour cream, half a package of Fiesta Ranch mix and a bit of salsa, then added shredded pepper jack cheese.
It was so good and so easy! Two Instant Pots to clean, two big salad bowls to clean – dinner was served and cleaned up in a jiffy.
The best part – there’s enough meat and beans for another meal.
