It’s the first frittata I’ve made and probably the first one I’ve tasted.
It got a little more brown than I would have preferred. Vince was out cleaning/organizing the garage, and he made a huge difference in there, but he kept needing me to come look at things and see if I use them every day, sometimes or rarely. There are two shelf units in the garage that are supposed to be for all the kitchen gadgets that I don’t use every day. There are things like stovetop pressure cookers, a Nesco roaster, a tub with the springerle molds (we do NOT want to lose those!), the decorative cake pans, etc.
There were things on there like an old yogurt maker that I haven’t used since I started making yogurt in the Instant Pot, the empty boxes for the serger and the coverstitch machines, empty boxes for some of my nicer baking/roasting dishes. I had saved those while we were moving but I doubt we’ll move again so those boxes got tossed.
Anyway . . I kept going out to look at things he wasn’t sure about saving or putting on a shelf that wasn’t so easy to reach and I didn’t hear the timer going off for the frittata but it was still great and something we will make again.
I followed the recipe and it made enough for two meals. I’ll see how it reheats but this recipe would be really easy to make smaller.

That looks delicious! I made a quiche this afternoon to use up a bunch of fresh spinach, small coins of baby carrots, orange & red chopped peppers, some dried onion, a container of sliced mushrooms & seasonings, a small can of chicken, plus 4 eggs and half & half & a small amount of cheese on the top. I’ve been on primarily a salad diet (one meal per day & it works!) and I’ve lost 30 pounds in about 5-6 weeks. I change out the protein portion each day – sometimes chicken, shrimp or hard boiled eggs. Easiest diet ever! I’m going to keep going as I feel so good. The quiche is a change in diet so it doesn’t get boring. Blood pressure is REALLY good, glucose numbers are less than halfway in the ‘good’ range, and both knees are doing terrific. I’m going to try that frittata recipe, too – thanks for the recipe! Thank you for all the recipes you share with us! Deb E

Sounds good. Doesn’t it feel so good to use up food that needs to be either used or tossed.
Did you use a crust for your quiche?
Congrats on the weight loss. I do love the one meal a day but Vince loves breakfast so we’re trying to eat everything within the four hour window and then have 20 hours of fasting.

Love Natasha’s recipies. I have made so many of them. I am also an avid fan of Carlsbad Cravings and Green Healthy Cooking. Also, Skinnytaste (I have all her cookbooks). Patti Jinich for Mexican Food and Lidia’s Kitchen for Italian and always The Barefoot Contessa. I am a cookbook collector and have 6 binders full of sheet protected recipes from the internet. I make something new about 4 times a week and have leftovers for lunch or dinner the other nights. I do not have a freezer and only one refrigerator, and unless we have the kids or company, only cook for the 2 of us. We eat a lot of soups, stews in the winter and lots of salads in the summer as we live in the So. CA desert. Use my Air Fryer, Insta Pot and Crock Pot all the time. I plug in the appliances on the patio in the summer to help keep the house cooler. We also BBQ quite a bit in the summer as well.

When we moved here 23 years ago I said I’ve never move again. So what am I doing? Packing for a long distance move from NH to FL. No other reason except I enjoy the warm months much more than the cold. If I never see another snowflake I will NOT be sad. At 74 packing up this 6 bedroom 3 bath home is daunting.
Funny you should mention frittata as that is what is in my oven now. Ham, onion, peppers and cheese.

Good luck with the move. I’ll be surprised if we never move again but . . time will tell. I think you’ll love Florida and I hope you never have to go through a hurricane.
