Yesterday I was back home from the doctor by 9 a.m. I was dressed – bra, makeup, real shoes, hair combed . . I suggested going out for breakfast. The only place Vince was willing to go was Golden Coral’s buffet. No . . not doing a buffet. Then he said “Since you’re dressed, let’s go to Walmart!” Seriously, Vince? I just looked at him. I’m thinking . . I can go to Walmart in my pajamas! Can’t we go somewhere else today? But, I didn’t say it. We did need a few groceries. Good thing it was only a few. Either prices have about doubled since I was last in the grocery store or I’m misremembering how much they used to cost. We hardly got anything but, granted, some of the things like almond flour, hemp seeds, etc. are more expensive than groceries I usually buy. We bought one pork butt but no other meat. No bacon. No sausage. No butter. No seafood. It was purely groceries – no laundry detergent, no Dawn — really, just food and it was right at $200. The cart wasn’t even half full.
Everything I picked up at Walmart, Vince said “It’s less at Aldi!” Good grief . . let’s just go to Aldi! But there were things I needed that Aldi didn’t have so we finished at Walmart, came home. I made the Crispy Cauliflower Rice casserole (recipe in yesterday’s comments) (Thanks Chris!). It was such a welcome change from chaffles, omelettes and plain eggs.
Then Vince wanted to go over east of Carthage and get eggs but first . . Aldi. We got what we needed there, ran to Carthage and got the eggs, came home, got it all put away, worked outside for a while and then I cross stitched the rest of the afternoon and into the evening.
If I had not started stitching Sunday night, I would never have gotten all the stitches done!

I kept thinking there had to be a mistake and checked the receipt at both Walmart and Aldi and nope — no mistake. I feel really bad for people who just simply cannot afford the things they need.

…Have you tried making a mixed frittata for breakfast. They’re super quick and so good. You can just start with eggs and add whatever you like….mushrooms, onions, spinach. I also like to cook the mixture in muffin pans. They heat up so fast in the microwave.

I will have to try those. Not sure I’ve ever had one. They always seemed to me like they were very similar to omelettes but I will try one before this week is over. Thanks!
