The last time Vince and I were on the keto diet, my heart was more into it than it is now. With the garden and cross stitching, I don’t even really want to cook and without being able to have toast or biscuits at breakfast, along with cream of wheat or oatmeal, I am so tired of eggs. So very tired of eggs! I’ve made egg bites using the sous vide a few times but . . still eggs though they do taste and feel different than scrambled or fried eggs. I’ve made chaffles the past two days. Vince likes them so if he’s happy with it, I’m happy with it.
Then the main meal – I’m so used to rice and beans and potatoes and when I don’t have a meal plan because honestly, I haven’t put enough effort into to to come up with ideas . . well, it’s a struggle. Yesterday we had steak, sweet potato leaves and salad. Salad! Every day is salad. I want a hamburger with a real bun!
One of the things I’m going to do is put some real effort into finding good recipes for keto meals. I’m pretty much ok with meats – it’s the sides I’m not doing so well with. But, we did it before, we can do it again.
Any suggestions? I do think I’ll have enough asparagus today to make the asparagus dish I made the other day.

– Parmesan cheese crisps? There are recipes out there, I like the premade ones. I can’t do Keto, because I like my carbs too much. Although I do limit them to smaller portions and once a day. 🙂

We do buy the parmesan crisps. It’s the sides at dinner and something for breakfast that’s getting to me. How many nights can we have asparagus? I guess til it quits producing! 🙂

I guess it’s just my addiction to carbs but I can only go so long without rice at meal time. Vince isn’t as hung up on rice as I am. We’re eating asparagus in some fashion every day because it’s growing in the garden. Thanks for the suggestions.

I’m with you. I can’t live like that for long so I’ve gone to balanced meals and once a week splurge. I’m losing weight slowly but steadily. I do strive for healthy carbs, no white bread, very little white flour product etc……you know the macros!
A friend of mine has “Carb Wednesday”. It keeps his weight off and yet he looks forward to 3 meals with a side of Carb.

Vince has the most weight to lose and it’s affecting his health so I’ll do it however he wants to do it. I don’t have nearly as much to lose as he does so even if I’m not 100% strict, I’ll be fine. It’s just breakfast that’s killing me with the eggs every day.

Can you do veggies, cheese and sausage or bacon or ham and just do eggs 1-2x/week? I can’t imagine disliking eggs but I understand you do not love them!

I just don’t like them every morning. For breakfast, when not on keto, we’ll have eggs maybe three days a week, some days we have pancakes of Dutch Baby, some days we have muffins but without toast or biscuits, I don’t like fried eggs or scrambled eggs so that narrows the way I can cook them. There are recipes out there . . I just need to spend a little effort looking. The recipes left in comments this week were great and helped a lot!

Instead of eggs I like cottage cheese with fruit salad. Kefir with a banana is also good protein and the banana on the side helps to sweeten the kefir.

For a breakfast side to fill in for those things we miss on Keto:
Crispy Cauli Hashbrowns
4 cups steamed cauliflower rice
1 cup shredded mozzarella
1 cup @PorkKingGood pork crumbs
2 eggs
½ tsp seasoning salt
I buy frozen cauliflower rice and microwave right in the bag for 8 minutes. Mix with remaining ingredients. Press into a 1/2 inch thickness onto a parchment covered cookie sheet. Bake at 350° for 30 minutes. Let cool
Slice into 8 rectangles and transfer to a ziploc bag. Freeze. When ready to eat, melt 2 Tbsp butter in a skillet and toast on both sides until crispy

Egg Alternative:
Basic Keto Oatmeal
1/4 cup Hemp seeds (hulled hemp seeds)
1 tbsp Golden flax seed meal
1 tbsp Vital Proteins Collagen Peptides
1/2 tbsp Chia seeds
1/2 cup heavy cream
Optional Add-Ins (Recommended for all variations)
1 tbsp Besti Erythritol (to taste)
1 pinch Sea salt (to taste)
Maple Pecan Add-Ins
1/2 tsp Maple extract
2 tbsp Pecans (chopped)
Chocolate Peanut Butter Add-Ins
1 tbsp Peanut butter
1 tbsp Coconut milk (or almond milk)
1 tbsp Sugar-free dark chocolate chips
Strawberries & Cream Add-Ins
2 tbsp Strawberries (finely chopped)
1/2 tsp Vanilla extract
2 tbsp heavy cream
Cinnamon Roll Add-Ins
3/4 tsp Cinnamon
3/4 tsp Vanilla extract (divided into 1/2 tsp and 1/4 tsp)
1 tbsp Besti Powdered Erythritol
1/2 tbsp heavy cream
Stir all ingredients, except cream or milk, together in a small saucepan. (This includes the optional sweetener and salt if using.)
Add cream/milk and whisk until smooth.
Simmer for a few minutes, until thickened.

We don’t use any artifical sweeteners or the ones that end in “ol”. We will use a little honey for sweetening things that need a bit of sweet. I can make these recipes work with the honey. Since breakfast is my biggest problem area, I’m looking forward to trying these. Thanks!

I have never had grits, but I know you have, so maybe this will be jumping off place for you:
Cheesy Low Carb Grits (serves one)
1 tbl chia seeds
1 tbl hulled hemp seeds (hemp hearts)
3/4 tbl tsp flax meal (ground flax seed)
1 tsp nutritional yeast
1/4 tsp salt
1/8 tsp paprika (optional)
1/8 tsp garlic powder (optional)
ground pepper to taste
2 tbl half & half/HWC
3 oz water (1/4 c + 2 T)
1/2 tbl butter
1 large egg
1/2 oz shredded cheese
In a medium-sized saucepan, combine the dry ingredients (chia seeds, hemp hearts, flax meal, nutritional yeast, salt, pepper, paprika, garlic powder).
Add the wet ingredients (half & half, water, butter, egg). With a fork, whisk the mixture until the egg is mixed in. (The butter will stay a cold lump, that’s fine.)
Put saucepan over low-medium heat and, STIRRING, cook for 3-5 minutes, or until the mixture has thickened considerably and is almost bubbling. It’s really important to stir while this is cooking so that the egg doesn’t become a big lump.
Turn off heat, let sit (with a lid on) for maybe 5 minutes while you fry up some bacon/shrimp/sausage.
Put in bowl. Top with, or stir in, shredded cheese and breakfast meat of your choosing. Done.
Macros: 350 cals, 27g fat, 3g net carbs (11g total, 8g fiber), 18g protein

I also can only eat eggs so many times till I’m done with them. I will make devil eggs with just a couple of boiled eggs or a frittata to change it up. I do enjoy the Keto Oatmeal and see someone recommended this. My go to for breakfast when doing low carb is spinach artichoke dip. I love it and just eat with a fork. lol. Not sure that is helpful. lol
