Remember I was freeze drying all those avocados? They finished up about 24 hours sooner than I had expected. I ended up with 6 quarts of freeze dried avocado. It isn’t crumbled really fine but it is crumbled.
This is what wouldn’t fit into the jars. I didn’t want to go grab a pint and didn’t want to partially fill a quart so Vince and I ate some of it in the freeze dried state before I made guacamole.
This was probably about 1/5th of what fits on a tray and I had three trays filled with the avocado.
Below shows about the size I crumbled the avocado into for adding to the jars.
All of what is shown on the tray is crumbled into that bowl. I added about water and lime juice til it was rehydrated and looking like mashed fresh avocado.
With a little onion, jalapeno, garlic and chopped tomatoes, it tasted exactly like fresh guacamole.
Vince said it was so good we’ll never have to go back to the Mexican restaurant for guacamole. That’s about the only reason we went out to eat Mexican – for their good guacamole.
I’m glad it turned out good but it’s obviously oily. After crumbling it, my hands were greasy – not terribly but enough so that the freeze dried avocado should probably be used within a couple of years.

I love guac, because I love avocados. I’m happy the cheaper prices are showing up now. Fresh Market has the BEST avocados. Freeze drying is a wonderful miracle of food storage, but I can’t justify buying one. Sadly. =) I’m glad you make such constant use of yours. You will still have plenty of food if your electricity goes out for a while. Freezers are great, right up until they have no power for a while. =P

Exactly. I’m sure it probably equals out but it’s nice that once they’re done and vacuum sealed, they sit til I’m ready to use them and use no power. Having food stored in freezers is definitely a concern – more so every day.

Even more because what they send are so wimpy and tiny, 2 of the first 16 I got died within days and I think two more died without producing anything. I do feel like I’ve gotten our money’s worth out of the freeze dryer but I’m not 100% sure I will replace it if ever it stops working.
