I’ve mentioned before that a neighbor has two young boys that we really like. They say the funniest things and don’t hesitate to tell you what they want! I mentioned a couple of weeks ago that I made cupcakes and took to them. They were white cupcakes with blue icing. I was going to use pink icing but figured . . boys . . blue. It was all homemade from scratch.
I had seen a recipe a couple of weeks ago where you mix angel food cake mix with a can of strawberry pie filling. One recipe said you shape it into a large-ish ball and put it in a muffin tin and the other said you spread it out in an 8 x 13 pan and bake it. Both said to use whipped topping on it. I was going to make that yesterday and share it with the neighbor boys.
Vince was over at their house today and the 6 year old said “We really liked those cupcakes Judy made but if she wants to make more, we like chocolate.” Vince came in and told me so I changed my plans and made a Texas Sheet Cake.
Vince went to take it over and when he walked in, the 5 year old said “I love you, Vince.” How can you not want to make chocolate for kids like that?

Hahaha! So nice that those boys are so thankful for you both!!
I’m at my daughter’s, since the wind storm knocked down so many trees and wires last night. Lost power at 3:30 yesterday afternoon and our electric supplier says all should be back on by Monday night at 8:00 PM…. They aren’t even in our portion of the county yet…. So glad I charged my Kindle yesterday!!

It’s fun to bake for kids when they really appreciate it. I’ve done the angel food cake mix with pie filling, using apple and using cherry pie filling. Now I’m going to have to try the strawberry too.

That is so sweet of that little boy to tell Vince he loves him. Next time you make the Texas sheet cake add 1 tsp. of cinnamon. Also, for it to be a Texas sheet cake there needs to be pecans in the frosting. My first mother- in -law gave me this wonderful recipe.

I do add cinnamon and pecans but one of the boys has so many allergies, I left them out this time. The cake is pretty “blah” without the cinnamon and pecans.
