This morning I saw this video on youtube and knew it was what we were having for breakfast. I used the food processor to grate the potatoes and followed the recipe as given.
I didn’t have ham so I used sausage. It was delicious and it was very filling. Almost always when I cook omelettes, I cook hash browns but with this, I could only eat half of mine.
It’s raining so I didn’t want to go out and use the grill so I cooked it in a skillet on top of the stove. This would be a great breakfast for company since it’s a bit unique and definitely delicious.

Thanks for the link! I was watching it and my husband heard the words hash brown omelette and perked up and came over….lol I think I will be making it as some point. I like your picture more than the video’s finished product as I think the hash browns need to be darker…and crispy! 🙂

I grated the potatoes with my food processor which makes more substantial hash browns. My hand grater makes them into very fragile little pieces. I do like it crispy. Not sure if I said it in the post but I turned the fire on low and put a lid on them for a few minutes after pouring on the eggs because the eggs weren’t really cooking and I definitely didn’t want runny eggs.
