This morning I wanted to make biscuits using spelt.

The Essential Home-Ground Flour book by Sue Becker is so useful for those of us who like milling our flours.

Thumbing through the book, I found three biscuit recipes that I could use. One was more traditional – grated cold butter, buttermilk and other “normal” ingredients. Another one used heavy cream and the third used cream cheese. I went with the more traditional recipe.

Vince is a bit picky about his biscuits so I wasn’t sure what he would think but he loved them. He said they were a bit sweet and nutty but there was no added sweetener. I believe there will be more spelt biscuits on our breakfast menus.
