Vince has had a birthday and for breakfast, I fixed pancakes, which he loves. I opened one of the half pint jars of cherries I recently canned and made syrup with the liquid in the jar, added the cherries and heated them up, served those over the pancakes and added whipped cream.
For dinner, I made lasagna, salad and heated frozen garlic bread.
I made a whole recipe of sauce, divided it in half and froze half of the sauce.
Since I was making a smaller batch, I thought I’d use the big loaf pan and that should work but I was very glad I decided to put it on a sheet pan because it did overflow and I was thankful all that grease didn’t end up in the oven.
Even using the loaf pan, we have enough leftovers for another meal.
For dessert, I used another jar of cherries, a pint this time, and made cherry crisp.

I am planning on making lasagna this week, too! I will also do mine in loaf pans (and freeze a pan or two because I love having freezer meals). I have my 2nd knee replacement in 2 weeks and I get all “hung up” on getting things prepared so my sweet hubby has an easier time caring for me.

What a lucky husband he is and what a good wife you are. I know you are not crazy about red sauce have you ever made lasagna with alfredo sauce? A white lasagna is really good with some cooked and squeezed dry spinach layered in it or really any vegetable that will not add a lot of liquid to the lasagna. It makes a great vegetable lasagna.

I would like it better but Vince wouldn’t like it. He isn’t crazy about white sauce.
