Eggs Benedict

For probably the last five evenings, I’ve intended to make English Muffins. The recipe I use is sourdough. Often I will make them with dried fruit cranberries, cherries blueberries – really, whatever I have on hand. I have to stir the dough up the night before so in the mornings, I would feed the sourdough, intending to make the dough that evening. I would get busy and first thing I knew, it was 1 or 2 a.m. and I’d tell myself I was going to wait til the next day so . . the next morning, I would feed the starter again and the same thing would happen.

Last night it was well after midnight but I said . . NO! I’m going to go get that dough started and I did. I made plain English Muffins this morning but I did feed the starter again and am going to make dough tonight for cranberry/walnut English Muffins. We have fresh sprouts and I love tuna salad on English Muffins with cranberries and I love adding sprouts to my tuna salad sandwich. The other thing I love would be a home grown tomato but that isn’t happening for a while.

So . . I cooked the muffins this morning and made Eggs Benedict but I fried the eggs instead of poaching them.

Andouille sausage instead of ham! I’m so in love with this andouille. Vince asked if we were going to be 5 packages of it every week. Each package is 1.5 pounds so I told him I can maybe make it with 5 pounds every other week. Not making any promises though – we may need 5 packages every week, at least til I’ve made up for the time I had to go without it.

Breakfast was delicious! Eating at home will always be my favorite place to eat . . unless there was an amazing Cajun restaurant in town and then I might be happy to go there.

Don’t get me wrong, there are places in town I like. I love Magic Noodle. I always get the same thing without even looking at the menu – Spicy Basil with fried rice and tofu. We may go to Magic Noodle twice a year. It isn’t Vince’s favorite. I love Trackside Burgers. They have the best burgers. I would eat there often but I am pushing my luck (allergy) if I eat there more than once a month. We probably go about once every four or five months just because it’s not on our regular route to go anywhere.

But, I’m always happy to eat at home!
