Yesterday I mentioned that I used Fiesta Ranch Dressing Mix instead of regular Ranch Dressing Mix. It was delicious! It had a bit of a Mexican taste but not so much that I would consider it a Mexican dish.
I took the beef out of the pressure cooker and shredded it. I reserved about 1 cup of the liquid, thickened the rest of it to make a good gravy, added the meat back to the gravy. I cut some of the small potatoes in half (didn’t peel them). In a separate skillet, I browned the potatoes, then added the 1 cup of reserved cooking liquid, put a lid on it and simmered that til the potatoes were tender. Then I added the potatoes back to the meat.
To serve it, I put the meat and potatoes in a bowl, with gravy, added sour cream, grated cheese and chopped jalapeno peppers.
We also had corn, which Vince added to his bowl of meat so I did the same thing, and we had a salad.
I asked Vince if he liked it and he said “I LOVE it!”. I think from now on, I’ll use the Fiesta mix instead of regular.

Judy I’m glad that dressing mix worked out. Now I go and look for it at the 3 different stores close to me, and none of them have it–including Kroger or Walmart. It must be a regional thing there in Missouri. 😀

I don’t think so. I first heard about it from a lady in Michigan and I was able to buy it in Texas. I just checked Brownwood’s Walmart and they have it – weird that none of the stores in your area have it. I will tell you that it’s hard to see what’s “Fiesta” and what’s regular. The top of the package looks exactly the same and it says “Fiesta” near the bottom. If the packets are in the display box, it’s hard to see that it’s the fiesta version.

True. I have my electric countertop appliances out in the sunroom so that’s where I cooked the roast yesterday. Every time I go in there, it smells so good . . even today!
