I just turned off the last canner load of potatoes. I’ve canned 45 pounds since Monday. The potatoes were really small and the peeling was a pain – really – my hands are aching, but I’m done and we have plenty of potatoes – at least enough to last til the potatoes in my garden (which are not yet planted) are harvested.
We also got 50 pounds of carrots Monday and so far, I’ve freeze dried 20 pounds of those. Tomorrow I plan to make spicy pickled carrots. It’s a recipe I’ve never tried so I’ll probably only use 5 pounds of carrots. It’s kind of a guess – do I use only 5 pounds and then wish we had more if we like them or do I use 10 pounds, hope we like them and take a chance??
I was making Mississippi Pot Roast for our meal today. As soon as I dumped the Ranch Dressing Mix into the pot, I realized I had grabbed a packet of Fiesta Ranch Dressing Mix so it won’t be what I was expecting but hopefully it will be good. I’ll let you know and if it’s yummy, I’ll be really happy since I used two roasts! Oh well . . too much going on and not paying attention. That’s what I get.
