I halfway wish I could say I’m done with canning for a while but . . you know I have all those carrots and potatoes to process but Sunday I canned 21 quarts of red beans and sausage.
We ate red beans, sausage and rice, along with cornbread and salad, on Sunday. The whole downstairs smelled so good from canning in the basement garage. I cooked the ones in the Instant Pot that we had for dinner and were delicious and we’re having leftovers today.
Yesterday, as I’ve already mentioned, I canned potatoes. I filled 19 pints but could only fit 18 pints in the canner so I stuck the 19th jar in the fridge and will add it to today’s load. I’ll have to see how I feel after prepping one five pound bag . . I may only can five pounds today. It would be nice to get 10 pounds done but . . that’s a lot of work.
Also, I’m going to have to either can in quarts or buy more jars so . . I think I’ll can in quarts! Whatever we don’t eat at one meal, we can have at another. These are great breakfast potatoes so I could fix them for breakfast one day and for dinner the next.

Yes, I can eat potatoes in quarts anyway. LOL I love potatoes.

Good potatoes are one of my criteria for a breakfast restaurant. There’s a nearby omelet house that has 88 combinations on the menu, but only hash browns, overly cooked. I go there for lunch more than breakfast!

There’s a place in Carthage that Vince likes to get breakfast but their hash browns always taste like they’ve been cooked in rancid oil. I know it has to be something else because it’s sometimes months between our visits there and, to me, they always taste like rancid oil. I won’t go there any more.
