I may have mentioned that I discovered a food truck, of sorts, that comes to Carthage on a regular schedule, though I’m not sure what that schedule is. It’s The Bayou Bandit and they have all kinds of seafood and Louisiana sausage. They even had live crawfish today but I couldn’t talk Vince into buying any. 🙁
We got andouille, smoked boudin for Vince, crawfish boudin for me, green onion sausage for gumbo and a box of mini crawfish pies.
I’m hoping they’re in our area at least every two weeks. I didn’t buy a ton of any of this because it’s all new brands for me and not all andouille, boudin and sausage is created the same. If we like this, and I think we will – the Best Stop andouille seems to be very loved by Louisiana folks, then I’ll get more next time he’s in town.

-There’s a Dutch food truck that comes near here once a month. My Dutch friend forgot this month, because it comes on first Wednesday, and that was the first day of the month!
So, along with food service trucks, we now have food delivery trucks? Strange new world.

I don’t even know what that stuff is, except for crawfish. LOL My family was from Leesville, LA, but long gone from there by the time I was born in the desert without all those foods.

Even back when you and I were kids, Lake Charles didn’t have a lot of cajun food in grocery stores. My parents, being from Sabine Parish, weren’t cajun and didn’t cook cajun food. I think it was on my 30th birthday that I had crawfish for the first time. I think it was after that when I had andouille for the first time, in a restaurant in New Orleans.
