I reminded Vince this morning that Sunday is supposed to be a day of rest but there isn’t going to be much rest around here today.
We were able to get dirt delivered last week. The dirt moving guy is supposed to be here tomorrow to get the foundation set up for the greenhouse. My big bags full of dirt for growing potatoes are right where the greenhouse will be so I’ll spend a few hours shoveling dirt out of those bags (because they’re too heavy to lift with all the dirt in them), then Vince and I will lift them onto the little flat trailer. We’ll spread weed cloth in the new area (which is on the side of the house), and then move the potato bags over there. There’s nothing planted in them yet but I’m moving the potatoes to try to keep the potato bugs away from the rest of the garden.
We’re going to fry a turkey (desperately trying to make room in freezers). After we eat, Vince will take the meat off the bones. I’ll probably stick the bones in the fridge and roast them on Monday and make broth and then can the leftover turkey meat. I don’t much like it after it’s been in the fridge for several days.
We have two large pork butts in the fridge. I’m going to season them and hope to get them smoked Monday. We have rain predicted for Tuesday and Wednesday and snow again on Friday. I’ll can the smoked pork on Tuesday or Wednesday when I can’t do much outside.
Who thinks I’ll get all that done today? Nope . . even I will be surprised if it all gets done.

Wish I had some cooked turkey! I’ve been canning a bunch of different meal starters and found a canning recipe for Turkey Tetrazzini that my husband wants me to make, but no turkey to make it with! It’s in a book that I just recently bought, and so far everything I have made has been really good,

Would you share the name of the book, please? Thanks!

It’s called “pressure canning for beginners and beyond” by Angi Schneider. There is a Kindle edition, but I find kindle and cookbooks don’t work for me.

I prefer paper cookbooks too. That’s funny because I have that book and it’s on my nightstand now – I’ve been looking at it at night before I fall asleep. Thank you for responding.

With all of that, it’s good to reflect that having so much food to process is a huge blessing. =)
