Yesterday I got the lasagna made. I started it about 10 a.m., got everything in the pot, simmered it a couple of hours. Vince said “Smelling it is making my mouth water!” He wanted to know if he could put some over a slice of bread and eat it with cheese. Of course! I should fix it more often. Maybe I could learn to like it if I ate it more. There are so many things I didn’t like as a child but love now but . . it may not be so easy to change my likes and dislikes at this age.
I did get to use my new lasagna dish and was glad I had it. Even with that big pan, a bit of the sauce bubbled out and made a mess in the oven. Darn it!
I shared about half of the lasagna with a neighbor and still had four big hunks of it to freeze, plus enough for Vince to have it again today.
With the canning, freeze drying and lasagna making yesterday, my bad foot is swollen and I can’t stand on it at all today. Glad to have leftovers in the fridge for me and lasagna for Vince to heat up. I had planned on making bread today but that is not happening. The plans have changed to sitting in the chair with the foot on a pillow and cross stitching all day.

Looks delicious. Never had lasagna growing up. Decided to make it a few years ago. Now everyone in the family asks for it. Even my brother in law wanted it for his birthday dinner. Hope your foot feels better tomorrow. Enjoy your day cross stitching.

I’ll do a blog post with the recipe. I don’t think England would want two old folks for new citizens and I doubt Chad would move and I’ve worked to hard to get back closer to them so, no . . probably not much of a chance of us moving to England but . . there’s a house in my neighborhood that could be for sale soon and I’d love to have a blog reader/friend next door.

Tastes change as we get older. I eat many things now that I didn’t as a young adult. Asparagus, broccoli, meat loaf, salmon, raw spinach, sweet potatoes, jambalaya, lasagna …..

The lasagna look wonderful! Have you tried red light laser treatment for your foot? I didn’t think it would help me but it has. I purchased one off of amazon in one last thing to try for my pain when nothing else has helped.

I made lasagna yesterday also!
I make my own sauce and used no boil noodles which were good and much less work. I make mine meatless- lots of cheese and ricotta .

I use a tip that I believe Ina Garten came up with. Use regular lasagna noodles but let them soak in hot tap water for about a half hour while you are getting everything else ready. They come out perfectly. Lasagna is one of my favorite dishes. Yours looks delicious!
