Last year I ordered carrots from Azure Standard and they were the sweetest carrots we had ever eaten. Since then, every carrot we’ve tried has fallen short. Several months ago Vince bought carrots at one grocery store and then another. They were tasteless and we actually ended up throwing them in the compost pile.
We walked into a Mennonite market today and found these!
I bought two bundles of them and they are so delicious. The man in the store said he may have more on Friday so I’ll bet we’re calling and if he does, we may run up there and get more.
The carrot tops/greens are no nutritious and I can usually get by with using the greens as a substitute for parsley.
Like carrots, which are a nutrition powerhouse, carrot tops are packed with vitamins A and C (they have six times as much vitamin C as the roots), fiber, calcium and iron. They are also high in potassium, an important nutrient for reducing blood pressure and keeping your heart healthy.https://holycowvegan.net/carrot-top-pestohttps://holycowvegan.net/carrot-top-pesto
I washed and rinsed and washed and rinsed and got the tops all clean of sand, grit and debris. Separated the stems from the “leaves” and it’s all in the freeze dryer, including the stems. I thought it would only fill three trays but it actually filled all four trays. The stems are tough so I’ll run them through the blender and make a powder for adding to soups and stews.
