Oscar was so funny out in the snow this morning. Every step he took, he grabbed a bite of it so he was running along scooping it up in his mouth as he ran. It was funny to watch. Our morning trips outside are always quick because he wants to get back in and eat.
The plan is that we’re staying in and not going anywhere today.
Yesterday I made pralines. Today I was thinking about trying to make divinity. My mom made the best divinity and it looked easy when she made it, though I’m so afraid to try it. I guess the worst that can go wrong is I dump the whole thing in the trash and try again another time.
Tomorrow is bread making day so I guess if I’m going to make divinity, today is the day I should do it. Cross stitching or candy making . . what shall I do?? 🙂

Divinity is best done on dry days. Have fun no matter what you choose.

I had always heard that too but my mom made it in southwest Louisiana where low humidity is rare. I think so long as the humidity is low inside the house, it doesn’t matter a whole lot what’s going on outside. How would divinity know it’s humid outside if it isn’t inside the house? I googled it and found that we should try to make it when the humidity is below 40%. The humidity inside was 36% and it worked.

Frieda is right. Divinity should be made made on dry low humidity days. My sister always made great divinity. I made the fudge.

My dad always made great divinity. You can always do a phone divinity session with your mom. FaceTime these days is great for so many things.

Forgot to ask— are the pralines the chewy kind or crunchy kind?

Crunchy. I don’t like the chewy kind. We always had crunchy so that’s what seems “right” to me.

I love homemade divinity. I haven’t made it for years though. I remember it was hard on the mixer, unless you have a really good one. My Mom’s mixer was just barely up for the task.

I don’t think it was any harder than bread dough but I wouldn’t try it with a hand held mixer.

Are the pralines chocolate or is it just the light?

i’m glad that your divinity turned out fine. Once when I was a young bride, my husband asked me to make lemon drops. (That rock hard candy shaped like little yellow lemons.) I had a copy of an old cookbook from the 1800’s. Needless to say it was a flop. We lived down a boardwalk over the bay of the ocean. I just stepped out the door and poured the whole mess into the bay at high tide. When low tide came there was my candy: one big hard yellow lump! It took that lump of lemon drop candy weeks to finally totally melt away as the tide came and went. It must have stuck to the bottom oof the bay.

That is too funny!

…Phooey, my comment just got tossed so I’ll try again. Your Bosch mixer will make quick work of Divinity….really quick. It only takes a few turns to set it.
I absolutely love divinity but haven’t made it in years. Vanessa hopefully is going to make some later today.

Really? I’ve only been happy with it for breadmaking . . not so much anything else but I’ll definitely try using that next time.
