I’ve mentioned before that we usually eat a late breakfast, then have another meal about between 2 and 3 p.m. and that’s it. Not necessarily ALL we eat but those are our main meals. Sometimes breakfast is cheese toast and fruit; sometimes it’s cereal . . it could be anything but we try to sit down and eat those two meals together. Often Vince will eat a sandwich later in the evening, or I’ll eat a bowl of roasted peanuts or cookies if we have them.
Vince loves breakfast, probably more than any other meal. This morning he came downstairs and said “Would you like grits and biscuits for breakfast?” I knew what he meant! Will you fix a big breakfast with grits and biscuits? I said “Sure, holler at me when it’s almost done.” His response: “You know I don’t know how to cook!” My first inclination was to say “You want it, you cook it!” but that wouldn’t have been nice. Vince is almost always willing to do all the crazy things I want done and can’t do for myself so the least I could do is fix biscuits and grits for him.
Look at that pan of biscuits. I think the #1 reason he keeps me around is for the biscuits.
We also had grits, bacon and eggs. I love a good, big breakfast too but I’m pretty happy to have it once every couple of weeks where Vince would like it a little more often – not every other day but probably twice a week.
Due to football (Chiefs), we’ll probably eat our other meal a bit later today.

I think Vince has a lovely way of asking you to cook a big breakfast for him. And you have a lovely understanding of him too. Good way to start the day. By the way – any recipe for those biscuits? I’m wondering if they’re like plain scones in England but cooked in a pan. Love to you both, Elaine x
