A day or so ago I was hungry for tuna patties. I used albacore canned tuna and basically followed this recipe. They were really good and Vince loved them. I made a sauce with mayo, pickle relish, Sriracha, and mustard.
I used two cans of tuna and there were four patties leftover. Last night Vince said “Want to heat up those tuna patties?” I wasn’t terribly hungry but I said . . why don’t we each eat one and we can each still have one for tomorrow night. He agreed.
They were super quick to make, one messed up bowl, one skillet to wipe clean and all I added was baked sweet potatoes and a salad. Have I turned into a lazy cook?

NO, you are not a lazy cook – just a smart one to make several meals from one prep. I need to make these since they seem to be easy as well as keep in the refrig for several days. Do they freeze well?
One thing I love about the winter months is making soups and stews. I use the instant pot on the saute/slow cook settings and then enjoy for several meals. I have a glass cover for the pot so it is easy to stash in the refrigerator and then heat up the next day.

We love tuna so will have to try this! I’m actually lazy so I usually just make tuna melts!

Those sound really good. I’ve had a hankering for salmon patties for awhile, but maybe I should try tuna.

I like the albacore tuna much more than I like salmon patties but your recipe may be better than mine.

My recipe is just my Grandmother’s old standby – crackers (sometimes corn flakes), onions, salmon, salt/pepper, egg.

salmon cakes are our favorite, with some Old Bay thrown in–using smoked salmon is especially tasty
