Stuffed Peppers

I love having meals in the freezer that I can take out and defrost and have a yummy meal with little effort. Today is one of the days when I would gladly pull out that kind of food for us to have for our meals. Last week I made a dozen stuffed peppers for the freezer and then earlier this week, while at Aldi, I bought more peppers and took out more ground beef. This morning I was thinking about taking stuffed peppers out of the freezer for dinner, then remembered that I needed to prepare the other peppers I bought. They’re easy to make and I figured I could muster enough energy and get that done so I did!

They have now cooled. I stuck them in the freezer on the tray, with two missing that we ate for our lunch. Once they’re frozen solid, probably this evening, I will vacuum seal them, two per package and with these and the ones I made last week, that will give us 10 meals of stuffed peppers – one for each of us.

By freezing them before vacuum sealing them, the vacuum sealer doesn’t smash them and they retain their shape.

I would like to sit and stitch for the rest of the day but I’m betting there’s a nap going to happen at some point. I’m really lucky that I can sleep for days when I feel bad.
